Why do women want to be friends with someone they know is clearly in love with them? Seems like she wants to date without dating if that makes sense

I asked out a a friend a couple months and she turned me down. Obviously it hurt but I wasn’t going to press the issue. Recently she started joking with me how much I’m in love with her, which just doesn’t make sense to me. Basically saying how everyone and their mother knows. Just generally why do women want to be friends with someone who is crazily in love with them?

One more thing: she always makes it a point to just talk about guys with me all the time. Every one night stand etc. Not rubbing it in my face, but I just don’t get why someone would continue to do that with someone that obviously loves them?
